Ingredients
• 2 cups water
• 1 cup quinoa, rinsed
• 1 small onion, chopped
• 1 tablespoon olive oil
• 1-1/2 cups frozen peas
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
Instructions
1) Cook quinoa in rice cooker.
2) Meanwhile, in a large cast-iron or other heavy skillet, saute onion in oil until tender, 2-3 minutes. Add peas; cook and stir until heated through. Stir in the cooked quinoa, salt and pepper.
